Mandelmassa

- 400g mandelmassa (200g almonds, 200g icing sugar, 1 egg white, almond extract blender > marzipan)
- 1 orange; juice + zest
- 3 egg yolks
- 5 egg whites
- Cake tin; oiled and ground almond scattered all over base and sides.
- Oven 180 fan (200 no fan)
One bowl; whip 5 egg whites
Second bowl; beat mandelmassa, orange and 3 yolks, for 2 minutes until mix is combined.
Fold a bit of the whites into the mandelmassa mix to loosen it up.
Fold in the remaining egg white but do not over fold. OK to leave specks of white throughout. You want to keep all the air bubbles.
Oven for 30 mins.
Check not burning at 20/25 and cover with foil if getting brown.
might be a bit wobbly and not quite finished but leave door open with spoon in door and oven off until cool.
Cover with sweetened cream optionally with Cointreau or something similar.
Finely grate chocolate over.
