Healthy Brownies

Ingredients:

- 125g tinned black beans, drained and rinsed

- 2 large eggs

- 1 tsp vanilla extract

- 20g cocoa powder

- 80g rolled oats

- 1 tsp baking powder

- 75 g dried dates

- 1 large extra-ripe banana

- 120ml milk of choice

- 50g dark chocolate chips

- 2 tbs nut butter of choice (optional)

Method:

Preheat the oven to 200c fan

2 Add all the ingredients, except the chocolate chips and nut butter into a blender and blitz for a few mins until completely smooth

3 Stir in the chocolate chips and then spoon the mix into a lined square baking tray, swirl in the nut butter, then dot in any extra chocolate chips

Bake for 15-20 mins.
